A Handful of Homemade Eats for Hot Summer Nights!

A Colorful Salad

Who doesn't want to eat a rainbow? It's not exactly Skittles - but in salads, the more color the better! I love grubbing on vibrant, organic fruits and veggies boasting with natural color, making a wonderful meal full of nutrients and eclectic taste. Sprinkling a little crumbled cheese never hurts either!

An Ice Cream Pazookie

BJ's may have invented the pazookie, but that doesn't mean we can't recreate it. One of my favorite desserts is a homemade pazookie. Now you might be thinking, "What is healthy about a pazookie!?"A big mushy cookie fresh out of the oven - topped with a dollop of your favorite ice cream. Well, all in moderation. If you make a small, personal size pazookie after a healthy meal, as long as it's not every night, you will be just fine. It makes for the perfect indulgence after a long day of work, exercise and healthy eating.

A Refreshing Pasta Dish

Healthy yet satisfying! This refreshing pasta dish is quick and easy. The brie cheese, fresh tomatoes and basil combine to make this a perfect Spring meal!

A Rich Smoothie

The ultimate snack for a sunny Spring day. Whip up a homemade smoothie for breakfast, dessert or anytime in between. Add blueberries packed with antioxidants, Greek yogurt packed with protein and Spinach full with Iron.

A Juicy Burger

Burgers are my ultimate weakness. However, eating these juicy delights in moderation and swapping certain ingredients is key. You can swap bacon for avocado, add lots of fresh veggies and diss the cheese. Also, try turkey burgers, veggie patties or even a portobello burger!
